Due to the cold climatic conditions, the grape juices awaiting complete fermentation are removed by the monks from the barrels as they became too cold to continue proper fermentation and were bottled early.

Later during the summer months, the fermentation process automatically restarted in the bottled grape juice (pale pink), which resulted in the legendary bubbles in the finished products. Initially, the bubbles felt to be a serious defect, and the bottles were exploding due to the re-fermentation process. 

Finally, when Dom Perignon tasted the exploded bottles of wine, everything changed. It felt like a mouthful of sparkling stars.
