Ingredients

  1. 2 cups of cooked rice.
  2. 3 eggs.
  3. 3/4 cup of sugar.
  4. 3 cups of cow whole milk.
  5. 1 tsp of vanilla essence.
  6. 1 tsp of ground cinnamon.
  7. 1/4 tsp of ground nutmeg.
  8. 1/4 tsp of salt.

How to prepare

  1. Preheat the oven to 350°F and fill a 2.5-quart baking dish.
  2. Mix all ingredients in a large bowl, except for the rice.
  3. Stir the cooked rice with a fork so that the grains separate well and there are no lumps. Then add the rice to the mixture in the large bowl and mix until it gets smooth.
  4. Bake the mixture in the oven for one hour or until the pudding becomes crusty.

What can be added to a baked rice pudding?

Some ingredients you can use to make your baked rice pudding a little more special include raisins and whipped cream. Both of these ingredients can be mixed to make the baked rice pudding filling.

Freezing and reheating baked rice pudding

If you want to save your baked rice pudding to eat later, you can put it in your refrigerator in a plastic container for up to 3 days. And if you decide to store the baked rice pudding for a longer time, you can use a freezer-friendly plastic container and store it for up to 3 months.
As for reheating, this step can be done using the oven at 350°F for 15 minutes if it is a large pan or portion. For small portions, a few minutes in the microwave will be OK.
